Curried Red Lentil and Cauliflower Soup

It’s been months since I’ve added to my One Hut Mama blog. To be honest, I was thinking of abandoning this blog because I wasn’t feeling confident that readers found it interesting or helpful. Then, suddenly, and because of the current Coronavirus pandemic, I found myself home-bound (like a good many people around the globe) with extra time on my hands. Aside from staying home to minimize the spread of this highly contagious virus, I think working on strengthening our immune system is one of the best things we can all do. And the way we do this is through the food we choose to nourish our bodies.

Soup is my favorite food to make. Not only do I love the creative process of making soup (there are few rules!), I also appreciate how soups are usually packed with delicious immune-boosting foods like onions, garlic and lots of yummy veggies 😋

After recently sharing a photo of this curried red lentil and cauliflower soup on Facebook, several people asked for the recipe. So, here we go!

1 white onion, chopped
4 stalks of celery, chopped
4 carrots, chopped
About 4 or 5 cloves of garlic, chopped
salt and pepper
In a soup pot, sauté the above ingredients in olive oil until translucent and fragrant.

Then add:
1 head of cauliflower, chopped
About 1 cup of red lentils

Continue heating through on low heat while adding spices to taste . . . curry, turmeric, garam marsala, cumin, hot pepper flakes. Personally, I tend to be generous with spices and I rarely measure anything.

Mix in a box of vegetable broth and a can of full fat coconut milk.

Simmer on medium low heat until lentils are ready, cauliflower is tender.

Let mixture cool for about 5 or 10 minutes before blending to make this soup smooth and creamy (emulsion blenders are the best!!) 😁 You can also use a blender.

Heat up again, adding more spices as needed/desired. A few shakes of Tabasco always adds a good punch, I think.

Do the taste test as you add spices!

After ladling into individual soup bowls, you could spoon on some feta, chopped red onion and chopped jalapeño (seeded) if you like? And, some freshly ground black pepper.

And, because I have a hot sauce addiction (is there a twelve-step program for this?), I rummaged through my options and decided to sprinkle on some Frank’s Red Hot Sauce for the finishing touch.
