In memory of my late mom this Mother’s Day weekend, I made her simply amazing apple crisp yesterday and want to share her recipe with you! 😋 Here’s a photo of this dessert – in the same dish she used – right before I put it in the oven:
But first, and just for fun, here’s a photo of my mom with my brothers and me in the summer of 1967. We were “on our way to Canada” per my mom’s handwritten note on the back of the photo.
Mom was always game for a family road trip adventure. Nothing complicated or over-planned. Just pack a bag, grab the roadmap and “let’s go.” She was pretty cool that way 👍
Speaking of adventures . . . and my mom’s simply amazing apple crisp . . .
It was early 1992 and I was a few months pregnant with our first child. I went on a 10th Mountain Division Hut trip with my husband at the time, my brother Ron and about 10 other people. To get to the hut, everyone needed to either snow shoe or cross-country ski in for about 3 miles.
Here’s a photo of the hut, called Jay’s Cabin, where we stayed:
For this trip, I signed up to bring dessert. Well, what could be more perfect than Mom’s Apple Crisp? 😋 I wanted to bake something that would fill the hut with yummy sweet smells on a snowy winter evening with a crackling fire in the wood-burning stove. Mom’s Apple Crisp was a big hit and memories of this hut trip dessert still come up in conversations to this day. No kidding.
As a side note, this hut trip experience is the original inspiration for One Hut Mama 😊
My mom passed away just months after this hut trip and a few weeks before my son was born 😔 So, making Mom’s Apple Crisp has me reflecting on so many memories of my mom and the last time I spent time with her in person, which coincidentally – and I literally just re-remembered this – was Mother’s Day brunch at our home in 1992. There are smiles and tears as I write this, but it’s all good.
Well then, without further ado, here is my mom’s simply amazing recipe!
Mom’s Apple Crisp
- 6 large apples
- salt, cinnamon
- 1 cube (stick) of butter
- 1 heaping cup of flour
- 1 cup of sugar
- dash of almond extract
Place peeled and sliced apples in an ungreased pan. Sprinkle a dash of cinnamon and salt on them. Melt the butter and mix the flour, sugar and almond extract with it. Sprinkle over apples. Place in preheated oven 350° for about 40 minutes or until topping is brown and apples are soft.
Here’s a montage I put together right after taking Mom’s Apple Crisp out of the oven. It includes a photo of my mom “Leona” from the late 1940s, a tea towel from her cedar chest, my old recipe card from when I copied down her recipe in around 1980, and her Corningware 8×8 she used when she made apple crisp for us growing up 😋
