It’s been a sad couple of days. I learned Tuesday morning my mother ‘n law (well, technically my former mother ‘n law, but Nancy and I never referred to each other as “formers”) passed away from the Coronavirus late Monday night, April 13. She was an easy target for the virus as she was in her late 80’s with compromised health and was being cared for in an assisted living center that experienced an outbreak this past weekend.
She was a wonderful, kind, intelligent and educated woman who had a long career as a medical professional. She played a big role in our family and the raising of our sons. She was our rock.
My sons had a special relationship with their Mimi and her passing is very sad for them, as well. Here’s a photo from about 20 years ago at the Denver Botanic Gardens. This photo was taken by Papa, who passed away 12 years ago.
I look at this photo and reflect how quickly life the way we know it can – and does – change.
Anyway, I asked the guys what their favorite food was that Mimi used to make and they said “meatloaf!”
So in honor and memory of their Mimi, her meatloaf recipe is below. What’s your favorite food your grandma used to make for you, or STILL makes for you? 😋
- 1.5 – 2 lbs ground beef
- 2 eggs
- 2/3 cup oats
- 1/2 chopped onion
- 1 glug* Worcestershire sauce
- 1 tsp mustard
- 1 glug* ketchup
- salt and pepper to taste
Mix together all ingredients, place in greased loaf pan and bake at 350 degrees for 1 hour or so. Serve up with some mashed potatoes (instant) and green beans (canned) for the whole Mimi-style comfort food experience 👍
*A word Mimi would have said with emphasis followed by her hearty laugh 😆
